Pork Tenderloin Spinach Orzo Salad
serves 4
Ingredients
- 1 lb pork tenderloin, cooked medium, cooled, bite-size dice
- 1/2 C orzo, cooked, cooled
- 3 C baby spinach, chopped
- 2 ea scallions, green and white parts, chopped
- 1 C cherry tomatoes, halved
- 2 T fresh basil, torn
- 2 oz goat cheese, crumbled
- 2 T white or red vinegar
- 1 T Dijon mustard
- 1 T honey or maple syrup
- 1 T olive oil
Instructions
- Whisk together the vinegar, mustard, honey and olive oil, then season to taste.
- Toss the remaining ingredients in the dressing, plate and serve.
